There is absolutely nothing wrong with saying "I'm sorry, but that's beyond my skill level. I can do a/b/c, but x/y/z is beyond my abilities and available time."
There's no reason to stress yourself and try to kill yourself to get something done because you made an offer for n, and people thought n+q was a *fabulous* idea. Don't feel obligated to do more then you offered, or more then you are comfortable doing.
